There are two main types of commercially available coconut oil: Refined and Virgin. Refined Coconut Oil is made from copra (dried coconut meat). In this process, the copra is dried, pressed, refined, heated and filtered. In the case of hydrogenated oils, the coconut oil is then further processed to increase the melting temperature of the oil. The process of hydrogenation creates trans fats.

Additional Information

Refined oil melts at 76/24 degrees (Fahrenheit/Celsius) and hydrogenated coconut oil melts at approximately 97/36 degrees (Fahrenheit/Celsius). RBD stands for refined, bleached and deodorized. Refined oil has no coconut taste or smell and is used for commercial food processing, home cooking and in the cosmetics industry.

Hydrogenated Coconut Oil contains trans fats. Hundreds of studies have been conducted on the harmful effects of trans fats including: increased cholesterol, linked to heart disease and risk of heart attack, inflammation of immune system, stroke, diabetes, resistance to insulin, reduces responsiveness of cells in blood vessels.
