Sorbitan monostearate is used to keep water and oil mixed in many food preparations. It is often used with a polysorbate to increase the emulsifying capabilities of both chemicals. It is sometimes referred to as synthetic wax.
Candy, ice cream, flavored milk, bakery items, cake mix, icing, whipping cream, cake mixes, puddings, whipped vegetable-oil toppings, cookie coatings, solid-state edible vegetable fat, cream substitutes, coconut spread, beverages, confectionery and as a protective covering on fruits and vegetables.
Possible Health Effects
High levels can cause liver enlargement. No single dose, during testing, was lethal in animals. Humans have been fed a daily single dose of 20 grams without any harmful side effects.
