There are two main types of commercially available coconut oil: Virgin and Refined. Virgin Coconut Oil is made from the kernel (meat) of a coconuts. Most commercial production involves a centrifuge to separate the oil from the milk and heat to reduce moisture content.

Coconut oil is one of the main sources of fat for people who live in many tropical regions. While high in saturated fats, coconut oil contains lauric and capric acids which both have been shown to have beneficial antibacterial and antiviral effects. Studies have been conducted on coconut oil's ability to fight fungal infections and Candida species. Studies are being conducted on whether this oil may be beneficial against herpes, measles, and HIV/AIDS.
