Yeast extract is a term used to describe a few different processed yeast products. Autolyzed yeast is made up of yeast cells that are allowed to die and break up releasing enzymes that will break down their proteins into simpler compounds such as glutamate. Hydrolyzed yeast results in the same thing; it just uses an outside source of enzymes for the break down. These freed compounds are one of the main ways we produce glutamate for MSG.

Additional Information

Since free glutamate has a similar umami taste to MSG, it is also used in many savory soups and dishes and can trigger the same reaction in those sensitive to MSG.

Possible Health Effects

The reactions to yeast extract are similar to MSG: The MSG Symptom Complex includes the following symptoms: burning sensation of the back of head, facial pressure, chest pain, headache, nausea, upper body tingling, weakness, palpitations, numbness, muscle tightness, an drowsiness. Other reported effects include exacerbation of existing health conditions such as asthma and fibromyalgia, depression, and difficulty breathing. See MSG for more information.
